I am trying to create a plugin but I need to add some fields in Project (like Project type, project hierarchy) and for Jira scrum/kanban board. Is there anyway to add columns in Jira tables for these entity or I have to create external table. Or can I create in table in Jira database?

You’ll want to use either Project entities or active objects). See https://developer.atlassian.com/server/jira/platform/entity-properties/ and https://developer.atlassian.com/cloud/jira/platform/modules/entity-property/ and https://developer.atlassian.com/server/framework/atlassian-sdk/active-objects/ to store your data.
Then you’ll either expose the data through web panels or through a dialog/separate page.
