Hi everyone, I just want to ask if it is possible to create a custom dropdown inside a JIRA issue view wherein the options for the dropdown is being fetched from a third-party API?

Are you wishing to put this dropdown into your app iframe? If so, both Forge UI Kit and Forge Custom UI will allow for this. If you are referring to the provision of a custom field, then I’d have to investigate further (maybe someone from the community could chime in).
