PowerApps: Jira API, emailAddress field blank

Afternoon all,
I’m a developer and we use Jira for our service desk. We are using the Jira API connector within PowerApps to automate some tasks, however I noticed something odd is occurring with any of the email fields (see below)

These dynamic options are being extracted from a recently-closed ticket. All of the above email fields return empty if the Reporter/Creator or Assignee are attached to a Jira account.
Is there a reason for this? Is there something I am doing wrong?
